The Best Cilantro Lime Rice

This cilantro lime rice is one of my favorite sides to make. This side is simple to make, but delicious and adds a nice punch of fresh flavors to any meal. My husband is not a big fan of rice usually, but he loves when I make this cilantro lime rice!

Cilantro lime rice goes great with any Mexican dish like tacos or enchiladas. It is also great for rice bowls and burritos. I also enjoy having it as a side with grilled chicken and using it as a base rice in my stir frys. Really, this cilantro lime rice is great any time you want a delicious rice!

This recipe can easily be doubled if you are serving a larger family or group. I use a chicken or vegetable broth or bouillon (whatever I have on hand). I think it adds a lot of flavor, but you can use water or any type or broth you like. If you use water to cook the rice, be sure to taste it and add salt to taste at the end.

Cilantro Lime Rice

Equipment

  • 1 fine meshed strainer
  • 1 medium sauce pan with a lid
  • 1 Measuring Cups
  • 1 Measuring Spoons

Ingredients
  

  • 3/4 cup white rice
  • 1 tbsp butter
  • 1/4 cup diced onion
  • 2 1/2 tsp minced garlic (3 cloves)
  • 1 1/4 cups chicken broth or water
  • 2 tbsp fresh lime juice 1 lime
  • 3/4 cup chopped cilantro 1 bunch

Instructions
 

  • Using fine meshed strainer, rinse rice in cold water until water runs clear. Drain well and set aside.
  • Heat sauce pan over medium heat. Add butter. Once butter is melted, add rice and onion. Stir often while cooking until rice turns bright white and onion softens. Approx 3 to 4 min.
  • Add garlic and cook, stirring frequently, until garlic is fragrant, about 30 seconds.
  • Pour in broth (or water) and stir, making sure to get all grains of rice down off the sides of the pan.
  • Cover pan, and reduce heat to lowest setting. Cook 15 minutes.
  • Remove pan from heat (still covered) and let rest for 10 min.
  • Uncover rice and check for doneness. (If it is still hard recover and cook on low additional 5 min. adding a tbsp or two of water if needed)
  • When rice is done, top with lime juice and cilantro.
  • Using a fork, fluff rice and mix in cilantro and lime juice throughout rice.
  • Serve immediately.

Notes

  • you can use any type of white rice that you like or have available
  • if using water instead of broth or bouillon you will probably want to add some salt to the water when cooking.
  • Rinsing the rice is an important step because it rinses off the extra starch so your rice will be fluffier and less sticky
