Instead of shredded potatoes, you could use diced. You could even add some vegetables like diced onions, bell peppers, spinach or mushrooms to make this cheesy ham and hash brown casserole your own!

Cheesy Ham and Hash Brown Casserole
Equipment
- 1 9×13 baking dish or 3 qt casserole dish
Ingredients
- 1 small bag frozen shredded hash browns 20 – 30 oz
- 2 cups diced ham
- 1 can condensed cream of chicken soup 10.75 oz
- 1 cup sour cream
- 2 cups shredded cheddar cheese divided
- salt and pepper to taste
Instructions
- Preheat oven to 375. Spray your casserole dish with nonstick cooking spray.
- In a large bowl, mix all ingredients together except for 1 cup of the cheese. Stir until ingredients are well combined. Add salt and pepper to taste.
- Pour mixture into your greased casserole dish and top with remaining cup of cheese.
- Bake casserole uncovered in oven for 45 – 55 minutes or until cheese is bubbly and center is heated through.
- Remove from oven and serve immediately.
Notes
- This recipe can easily be doubled or halved
- You can use any cream soup that you have in your pantry or that you like
- I use one small bag of hash browns in mine, since the size of bag varies so much depending on my store or the brand available that’s why I have such a large range for the size. Use whatever you can find.
- If your bag is on the larger end of the spectrum, you may want to add a little more sour cream or cheese if you want more of a gooey texture to your casserole.
