This recipe makes the absolute best homemade pancakes! I love this pancake recipe because it comes together quickly and uses simple pantry ingredients.

I prefer to cook from scratch whenever possible. One thing I enjoy is having control over the ingredients that go into the food I am making. That is important to me because I just can’t be sure what exactly is being put into prepackaged items. Many times, food seems to be processed more than needed and there are many artificial ingredients in prepackaged foods. Just take a look at the ingredient list from most any grocery store item. You will find that you can’t pronounce or even identify what most of the ingredients even are.

Even though I enjoy cooking from scratch, I also don’t want to spend my whole day in the kitchen. That is why I love easy homemade recipes like this pancake recipe! This recipe makes some of the best pancakes I have ever had. These pancakes are fluffy and soft with a bit of sweetness even before they are topped with anything!

This is a smaller batch recipe since I cook just for myself and my husband, but this recipe very easily doubles if you are feeding a larger group. Just double everything evenly. I like to use a 1/4 cup measuring cup to scoop my pancakes onto the skillet. I find it makes a nice size of pancakes. It also keeps them pretty even in size which helps the pancakes cook evenly.

I cook my pancakes on a cast iron skillet, but you can use any kind of skillet or large flat bottomed pan that you have available. My secret to cooking pancakes is I like to pour a little vegetable oil in the middle of my skillet before adding the pancake batter. This helps to prevent the batter from sticking to the pan. It also makes just a touch of crispiness around the very outer edge of the pancake which is one of my favorite parts!

Fluffy Homemade Pancakes

Equipment

  • 1 Skillet
  • 2 Medium Mixing Bowls
  • 1 Measuring Spoons
  • 1 Measuring Cups
  • 1 Skillet or large flat bottomed pan

Ingredients
  

  • 1 cup flour
  • 1 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 dash salt
  • 1 cup milk any kind you like
  • 1/4 cup applesauce
  • 1 tbsp vegetable oil
  • 1 tsp vanilla extract

Instructions
 

  • Preheat skillet to medium. Lightly grease skillet with some vegetable oil.
  • In a medium size mixing bowl, whisk together your milk, applesauce, vegetable oil and vanilla.
  • In the other medium size mixing bowl, add flour, sugar, baking powder, baking soda and salt. Whisk together.
  • Add wet ingredients to dry. Stir batter. Some lumps are fine.
  • Pour batter onto skillet using 1/4 cup measuring cup. Once you have bubbles on the surface that begin to pop, (about 2 min) flip pancakes. Cook for additional 1 to 2 min. until both sides are a nice golden brown.
  • Remove from skillet and top with toppings of your choice. Serve immediately.
