This delicious Mexican pizza recipe is very easy and so good! Mexican pizzas are a fun twist on taco night. They are sure to be a new family favorite!
We love Mexican food in my home, so we love trying out new way to get those great flavors. These Mexican pizzas were inspired by the fast food version. I liked these better than their fast food inspiration. One reason for this is because I had control over all the ingredients. Also they were so fresh and flavorful. Plus these Mexican pizzas are fully customizable to your preferences!
Mexican pizzas use simple ingredients that combine to make really explosive flavors! You may already have all the ingredients available in your kitchen. If not they are inexpensive and easy to find at the grocery store.
These Mexican pizzas cook up quickly so they are perfect for a busy weeknight meal or anytime you are in the mood for a Mexican treat!
The ingredients needed for Mexican pizzas are ground beef, taco seasoning, (try my delicious taco seasoning recipe https://cactusflowerkitchen.com/the-best-homemade-taco-seasoning/) refried beans enchilada sauce, flour tortillas (I used the small 6 inch or fajita size tortillas) and any toppings that you like. The flour tortillas in these Mexican pizzas are deep fried to be crispy, but it is very simple to do! Simply take a large pan and put about an inch of vegetable or canola oil in the bottom and heat over medium heat. Once oil is hot, place one tortilla at a time in the oil and fry on each side 30 to 60 seconds until tortilla crisps up and begins to brown. You can pop any bubbles gently with a fork, or squeeze with your tongs as you are turning them. Place on a paper towel lined plate until you are ready to use them. Each Mexican pizza will use two tortillas.

Mexican Pizza
Equipment
- 2 10-12 inch skilets
- 1 Measuring Cups
- 1 small pan
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1/4 cup water
- 1 can enchilada sauce
- 1 can refried beans
- 12 6 inch flour tortilas
- 2 cups shredded cheese
- 1/2 cup vegetable or canola oil enough for about an inch in the bottom of your skillet
Instructions
- In large skillet over medium heat, cook ground beef until browned. Drain.
- Add taco seasoning, 1/4 cup of water and 1/2 cup enchilada sauce. Bring to a boil then reduce heat and simmer for 10 min stirring occasionally. Remove from heat.
- Preheat oven to 400 degrees.
- In a large skillet, heat oil on med heat.
- Fry each tortilla for 30 to 60 seconds per side, until lightly browned and crispy.
- Using small pan, heat refried beans so they are spreadable.
- Layer tortilla, beans, meat, tortilla, cheese for each pizza
- Drizzle pizzas with the remaining enchilada sauce.
- Bake in oven for 10 – 12 min until cheese is melty and bubbly.
- Remove from oven and top with any toppings you like, then serve.
Notes
- Any bubbles that you get while frying tortillas can be popped with a fork or tongs while cooking.
- These would be great topped with lettuce, tomato, sour cream, green onion, avocado and/or olives. They are also great left as made in the recipe. However you and your family like them!
- Taco sauce can be substituted for enchilada sauce
- Corn tortillas can be substituted for flour if you prefer. You could skip the frying step by using tostada shells.
