Mexican Pizza

Equipment

  • 2 10-12 inch skilets
  • 1 Measuring Cups
  • 1 small pan

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can enchilada sauce
  • 1 can refried beans
  • 12 6 inch flour tortilas
  • 2 cups shredded cheese
  • 1/2 cup vegetable or canola oil enough for about an inch in the bottom of your skillet

Instructions
 

  • In large skillet over medium heat, cook ground beef until browned. Drain.
  • Add taco seasoning, 1/4 cup of water and 1/2 cup enchilada sauce. Bring to a boil then reduce heat and simmer for 10 min stirring occasionally. Remove from heat.
  • Preheat oven to 400 degrees.
  • In a large skillet, heat oil on med heat.
  • Fry each tortilla for 30 to 60 seconds per side, until lightly browned and crispy.
  • Using small pan, heat refried beans so they are spreadable.
  • Layer tortilla, beans, meat, tortilla, cheese for each pizza
  • Drizzle pizzas with the remaining enchilada sauce.
  • Bake in oven for 10 - 12 min until cheese is melty and bubbly.
  • Remove from oven and top with any toppings you like, then serve.

Notes

  • Any bubbles that you get while frying tortillas can be popped with a fork or tongs while cooking.
  • These would be great topped with lettuce, tomato, sour cream, green onion, avocado and/or olives.  They are also great left as made in the recipe.  However you and your family like them!
  • Taco sauce can be substituted for enchilada sauce
  • Corn tortillas can be substituted for flour if you prefer.  You could skip the frying step by using tostada shells.
