Apple Cider Donut Bundt Cake

Ingredients
  

Cake
  • 3 cups flour
  • 2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp salt
  • 1 1/2 tbsp baking powder
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup vegetable oil
  • 3 eggs room temperature
  • 1 cup unsweetened applesauce room temperature
  • 1 cup apple cider room temperature
  • 1 tsp vanilla extract
Cinnamon Sugar Topping
  • 1/4 cup granulated sugar
  • 2 tsp ground cinnamon

Equipment

  • 1 Bundt Cake Pan
  • 1 Mixer
  • 1 Measuring Cups
  • 1 Measuring Spoons
  • 2 Mixing Bowls

Method
 

  1. Preheat oven to 325. Spray bundt pan with nonstick spray and then dust pan with flour and set aside.
  2. In a medium size mixing bowl, combine the dry ingredients: flour, cinnamon, nutmeg, salt and baking powder. Whisk together and set aside.
  3. In a large mixing bowl, combine granulated sugar, brown sugar and vegetable oil. Mix on medium speed for about a minute or until well combined.
  4. Add eggs to the sugar mixture, and beat on medium for 2 minutes.
  5. Add the applesauce and vanilla extract and min to combine.
  6. Add about 1/3 of flour mixture while mixing on low, then add about 1/3 of the apple cider. Continue this rotation while mixing until all flour and cider have been added. Mix until all flour is combined.
  7. Pour batter into prepared bundt pan and bake for 50 min.
  8. Cake is done when toothpick inserted into center of cake comes out mostly clean, with a few crumbs on it.
  9. Let cake cool completely in bundt pan (1 hour)
  10. Turn cake out onto a plate.
  11. Combine cinnamon and sugar for topping.
  12. Sprinkle cinnamon and sugar on cake that is cool to the touch to desired thickness of topping.

Notes

  • I use a silicone bundt pan, and my cake usually takes much longer than this to bake.  Since ovens and pans vary, I recommend beginning to check your cake for doneness around 50 min and adjusting as needed.  Many cakes will need additional time.  
  • This recipe creates a thin batter.
  • Optional for your cinnamon sugar topping, melt about a 1/4 cup of butter and use a pastry brush to brush onto cake before adding topping.  Depending on your bundt pan design, this may help your topping to stick better.
