Peanut Butter Cup Oat Bars

Ingredients
  

  • 1 cup Natural Peanut Butter
  • 1/2 cup Pure Maple Syrup
  • 2 cups Quick oats
  • 2-4 tsp Water
  • 3/4 cup Dark Chocolate Chips

Equipment

  • 8x8 pan
  • Parchment Paper
  • Small or Medium Pot
  • Spatula
  • Microwave Safe Bowl
  • Measuring Cups
  • Measuring Spoon

Method
 

  1. Use parchment paper to line an 8x8 pan
  2. Combine peanut butter and maple syrup in a small pot on stove. Heat on medium while stirring occasionally until combined well and smooth in texture. It should have a glossy appearance.
  3. Remove pot from heat and stir in quick oats until coated.
  4. Add water 1 tsp at a time (if needed - stirring after each tsp) until the mixture comes together and has a thick, cookie dough-like consistency.
  5. Transfer oat mixture to lined pan. Press down firmly in pan and set aside.
  6. Add chocolate chips to microwave safe bowl and heat in 20 second increments - stirring each 20 seconds until chocolate is melted completely and smooth.
  7. Pour chocolate over oats and spread evenly.
  8. Put pan in freezer or 30 - 60 minute to set.
  9. Remove from freezer and cut into squares.
  10. Enjoy immediately or store in fridge in storage container with lid.

Notes

  • To use old fashioned oats instead of quick oats, pour oats into a food processor and pulse a few times before stirring into peanut buttered maple syrup mixture.
  • Honey can be used instead of maple syrup.
  • Any nut butter can be used instead of peanut butter.
