Course Dessert, Snack
Servings 9

Equipment

  • 8x8 pan
  • Parchment Paper
  • Small or Medium Pot
  • Spatula
  • Microwave Safe Bowl
  • Measuring Cups
  • Measuring Spoon

Ingredients

  • 1 cup Natural Peanut Butter
  • 1/2 cup Pure Maple Syrup
  • 2 cups Quick oats
  • 2-4 tsp Water
  • 3/4 cup Dark Chocolate Chips

Instructions

  • Use parchment paper to line an 8x8 pan
  • Combine peanut butter and maple syrup in a small pot on stove. Heat on medium while stirring occasionally until combined well and smooth in texture. It should have a glossy appearance.
  • Remove pot from heat and stir in quick oats until coated.
  • Add water 1 tsp at a time (if needed - stirring after each tsp) until the mixture comes together and has a thick, cookie dough-like consistency.
  • Transfer oat mixture to lined pan. Press down firmly in pan and set aside.
  • Add chocolate chips to microwave safe bowl and heat in 20 second increments - stirring each 20 seconds until chocolate is melted completely and smooth.
  • Pour chocolate over oats and spread evenly.
  • Put pan in freezer or 30 - 60 minute to set.
  • Remove from freezer and cut into squares.
  • Enjoy immediately or store in fridge in storage container with lid.

Notes

  • To use old fashioned oats instead of quick oats, pour oats into a food processor and pulse a few times before stirring into peanut buttered maple syrup mixture.
  • Honey can be used instead of maple syrup.
  • Any nut butter can be used instead of peanut butter.
