Use parchment paper to line an 8x8 pan
Combine peanut butter and maple syrup in a small pot on stove. Heat on medium while stirring occasionally until combined well and smooth in texture. It should have a glossy appearance.
Remove pot from heat and stir in quick oats until coated.
Add water 1 tsp at a time (if needed - stirring after each tsp) until the mixture comes together and has a thick, cookie dough-like consistency.
Transfer oat mixture to lined pan. Press down firmly in pan and set aside.
Add chocolate chips to microwave safe bowl and heat in 20 second increments - stirring each 20 seconds until chocolate is melted completely and smooth.
Pour chocolate over oats and spread evenly.
Put pan in freezer or 30 - 60 minute to set.
Remove from freezer and cut into squares.
Enjoy immediately or store in fridge in storage container with lid.
